Fresh Pasta Dough

yield: 2 servings

1 ¼ cups all purpose flour

2 large eggs

1 tablespoon olive oil

½ teaspoon sea salt

  Making fresh pasta dough is fun and very easy. Traditionally, the dough is mixed directly on a board or counter but it is acceptable to begin the dough in a bowl to limit the cleanup. Laminate counter tops are fine for kneading dough but natural or engineered stone is best as it is non-porous and maintains constant temperature, especially important when working with yeast doughs.

  In a bowl or on a countertop, combine the salt and flour. Using your fingers, create a well in the center of the mound, being sure that the well’s walls are equally thick and high. In a separate container, combine eggs and olive oil. Scramble eggs with a fork to incorporate oil.

  Add 1/3 of egg/oil mixture to center of well. Using a swirling motion, pull flour from inner walls of well into eggs and mix until it forms a thick paste. If working on a countertop, be careful not to break through the walls of the well as egg will run out over the work surface. When center is no longer runny, add half of remaining egg mixture and stir to paste. Add remaining liquid and repeat. Continue to mix until fork is no longer effective and then turn dough out onto work surface.

  Knead dough by flattening, folding it in half and pressing hard with the palm of your hand. Rotate 90’ and repeat over and over until dough is a consistent color (no patches of flour or egg mixture) and begins to feel springy. Pasta dough should be visibly bumpy but soft and smooth to the touch. To test, press a finger into dough. The depression made by your finger should spring back almost entirely. Flatten dough into a disk 1 ½ inches thick, wrap with saran and place in cooler to rest for 20-30 minutes or until finger divot does not bounce back. This means that the gluten that was excited in the kneading process has relaxed and the dough is ready to be rolled and cut.

 

Four cheese Alfaro

  yeild: 2

1 cup heavy cream

2 tablespoon butter

1 garlic clove, minced

¼ cup parmesan

½ cup mozzarella

¼ cup provolone

¼ cup Romano

Salt and pepper to taste

In a sauce pan add butter and garlic and cook until you smell garlic. Then add heavy cream and all cheeses. Mix until fully melted and combined. Season with salt and pepper.

 

Garlicly shrimp herb tortellini

  yeild: 2

1 pasta recipe

1 cup shrimp ( 8 oz chopped fine)

2 garlic cloves, minced

¼ cup mixed herbs (parsley, chives, basil)

½ cup ricotta

¼ cup parmesan

Salt and pepper to taste

¼ cup butter

In a small bowl combine both cheese, garlic and shrimp. Mix and season with salt and pepper. Cut circles out of sheet of pasta, place filling in center of pasta circles and fold in half, bring the two edges together and crimp together. repeat until mixture or pasta runs out.

Cook in boiling water until floating then an additional 3-5 minutes to ensure shrimp is cooked. strain and place in bowl with butter, toss with herbs and serve.

 

 Strawberry salad with basil and avocado

  Yield: 2

1/2 cup sliced strawberries

½ cup halved mini mozzarella balls

1/2 ripe avocado, pitted and diced

¼ cup candied pecans, toasted

¼ cup loosely packed basil, torn

2 cups romaine chopped

Sea salt and freshly ground black pepper

Balsamic glaze for drizzling

Olive oil for drizzling

Place the strawberries, mozzarella, avocado, pecans basil and romaine in a bowl. Drizzle with olive oil, and season generously with salt and pepper. Gently toss. Drizzle with balsamic glaze.

 

Brownie pudding (chocolate lava cobbler)

  yield: 8

1 cup flour

2 teaspoon baking powder

1 teaspoon salt

2/3 cup sugar

2 tablespoons cocoa powder

½ cup milk

2 tablespoons veggie oil

1 teaspoon vanilla

1 cup brown sugar

4 tablespoons cocoa powder

1 ½ cup hot water

Preheat oven 350

Grease 9×9 pan

In a small bowl mix together flour, baking powder, salt, sugar, 2 tablespoons cocoa powder, milk, veggie oil, and vanilla. The batter will be very thick. Pour into prepared pan, spread evenly.

In a small bowl combine brown sugar and remaining cocoa powder, pour over top of thick batter. DON’T MIX.

Pour hot water on top and place in the oven. Bake for 30-40 minutes. Serve warm with vanilla ice cream.

Roasted Blackberry Tenderloin

Gnocchi with browned butter sage sauce

Cacio De Pepe Brussel Sprouts

 Brownie Trifle

Fresh Potato Gnocchi

yield: 2 servings

1 pound russet potatoes

½ cup all-purpose flour

½-1large egg, beaten

1 teaspoon fine sea salt

Kosher salt for pasta water

Preheat oven to 400 degrees

  Pierce each potato 3 times with a fork and bake on baking sheet at 400 degrees for 35-50 minutes, depending on size of potatoes. Use a fork to test potatoes and return to oven if still hard in the center. Remove from oven when done.

  While potatoes are still very hot, split each and cupping in a clean towel over your hand, scoop insides into a small mixing bowl. Scoop potatoes into a potato ricer and press through.

  Sprinkle flour and salt over riced potatoes, then drizzle eggs and oil over mixture and mix with a wooden spoon until cohesive dough forms. Dough will cool significantly during mixing. Turn dough onto a clean work surface or silicone mat and knead by hand until smooth. If the dough is sticky, add flour 1 tablespoon at a time until dough is only slightly tacky.

Let sit for 10 minutes.

  Roll dough into a ball, then using both hands, roll it into a cylinder. Continue to roll until the dough is a rod ½ inch in diameter. Using a bench scraper, cut dough into ½ inch long chunks, lightly dusting with flour if necessary to prevent sticking. Pick up each piece and lightly roll it down a textured gnocchi board onto a lightly floured baking sheet. Gnocchi should all be of similar size for even cooking.

  Generously salt water and bring to a low boil (water should be as salty as seawater). Add all gnocchi at once for even cooking. When gnocchi floats and water returns to a boil for 1 minute, strain through a colander for 2 minutes, then sauce and serve immediately.

Brown Butter and Sage Sauce

yeild: 2 servings                                                                           

6 tablespoons unsalted butter, cut in ½ inch cubes

2 tablespoons unsalted butter, cut in half and chilled

1 tablespoon fresh sage leaves, chopped

½ tablespoon sherry vinegar

Fine sea salt and ground black pepper

  Melt 6 tablespoons butter is a medium skillet at medium-low heat. When butter melts and foam subsides, increase heat to medium. Continue to cook, stirring constantly, until butter begins to brown and takes on a light brown color and nutty aroma. Add sage and vinegar.

 

 

 

Beef with blackberry sauce

Yield 2:

Beef tenderloin

Salt and pepper

 oil

Blackberry Sauce

1/2 cup red wine

1/4 cup roasted blackberries

¼ cup beef stock

2 tablespoons butter

Season Beef with salt and pepper. In a pan over medium high heat, add oil and beef. Cook until desired internal temp is reached.

Remove from pan and add red wine, roasted black berries, beef stock and reduce down by half. Add butter and swirl to melt. Once melted turn heat off and serve on beef.

 

 

 

CACIO E PEPE BRUSSELS SPROUTS

INGREDIENTS

  • 1tablespoons extra-virgin olive oil
  • 3/4teaspoons freshly ground pepper
  • Crushed red pepper flakes
  • 7ounces shredded Brussels sprouts
  • 1/2teaspoon kosher salt
  • 1/2cupfreshly grated Parmesan cheese, plus more for serving
  • Zest of 1/2 lemon
  • 1/4cup toasted hazelnuts or pecans, roughly chopped

INSTRUCTIONS

  • In a large skillet over medium heat, cook the olive oil, pepper, and red pepper flakes together until toasted, 30 seconds to 1 minute.
  • Add the Brussels sprouts and cook, without stirring, until they begin to soften, about 2 minutes.
  • Season with the salt, and cook until the Brussels sprouts just begin to char, about 2 minutes.
  • Remove the skillet from the heat and add the Parmesan, lemon zest, and hazelnuts.
  • Serve warm, topped with more fresh Parmesan, if desired.

 

 

 

Toffee Brownie Trifle

  Yield: 8

1 (18 ounce) package brownie mix (9×13 pan size)

2 1⁄2 cups cold milk

1 (3 1/2 ounce) package cheesecake flavor instant pudding or (3 1/2 ounce) package instant vanilla pudding

1 (3 1/2 ounce) package instant white chocolate pudding

16 oz whipped cream or cool whip

2 -3 Heath candy bars, chopped (can also use packaged toffee bits)

Optional toffee sauce

Prepare and bake brownies as directed on package.

Cool completely, and then cut into 1-inch cubes.

Beat milk and pudding mixes on low speed 2 minutes.

Fold Cool Whip into pudding.

Place 1/2 brownies into dish, cover with 1/2 pudding mixture.

Repeat layers.

Refrigerate until needed.

Top with toffee sauce and sprinkle with Heath bits just before serving.

 

 

 

Nick’s Supernatural Brownies

1/2 pound/2 sticks/227 grams unsalted butter, cut into 12 pieces

1/2 pound/227 grams dark chocolate (60% is perfect), cut into 1/4-inch pieces

1 cup/200 grams firmly packed dark brown sugar

1 cup/200 grams granulated sugar

1 cup/135 grams unbleached all-purpose flour (spoon flour into dry-measure cup and level off)

1/4 teaspoon salt

4 large eggs

2 teaspoons vanilla extract

2 cups/about 200 grams pecan or walnut pieces, divided (optional)

9×13 pan

  1. Set a rack in the middle level of the oven and preheat to 350 degrees.
  2. In a medium saucepan melt the butter over medium heat. Let the butter start to sizzle and get very hot. Off heat add the chocolate. Shake the pan to submerge the chocolate and wait a minute. Whisk smooth.
  3. Place the brown sugar, granulated sugar, flour, and salt in the bowl of a stand mixer and mix with the paddle on medium speed until the mixture is very fine and powdery, 2 or 3 minutes.
  4. Add the eggs, one at a time, beating to incorporate between additions, followed by the vanilla.
  5. Remove the bowl from the mixer and thoroughly fold in the butter and chocolate mixture. Fold in three quarters of the nuts, if using.
  6. Scrape the batter into the prepared pan and smooth the top. Sprinkle with the remaining nuts, if using.
  7. Bake the brownies until they are slightly firm and no longer liquid in the center of the pan, about 40 minutes. Cool in the pan on a rack, then wrap in plastic and wait until the next day to cut them—they are still too soft immediately after cooling. To rush the process, chill the cooled and wrapped brownies for a couple of hours before cutting the brownies into 2-inch squares.

 

 

Toffee sauce

½ cup unsalted butter

 ¾ cup heavy cream

 ¾ cup brown sugar, packed

 2 teaspoons unsulphured molasses (teaspoons, not tablespoons)

 pinch salt

½ teaspoon pure vanilla extract

  1. In a medium saucepan, melt the butter. Add the cream, brown sugar, molasses, and salt. Bring the mixture to a simmer, whisking occasionally, and simmer for 5-8 minutes. Whisk in vanilla and set aside to cool slightly; it will thicken as it cools.

Bistro salad with champagne dressing

  yield: 2

2 cups romaine lettuce

2 strips of bacon

¼ red onion sliced

1 hard-boiled egg

 10 green beans, trimmed and blanched

¼ cup croutons

1 garlic clove, minced

1 tablespoon whole grain mustard

¼ cup champagne vinegar

1 lime zested and juiced

1 tablespoon honey

1-2 dashes hot sauce

Salt and pepper to taste

¼ cup extra virgin olive oil

In a small bowl, combine garlic, mustard, honey, and lime juice/zest. Mix together to bring out all the flavors. Add vinegar, and hot sauce. At the slowest possible speed drizzle the oil into the bowl while whisking as fast as possible. Season with salt and pepper.

Assemble salad onto chilled plate, drizzle dressing over top and serve.

 

CLASSIC RAVIGOTE DRESSING

INGREDIENTS

  •  1 Tablespoon champagne vinegar
  •  salt
  • fresh ground pepper
  • 1teaspoon minced shallot
  • 1teaspoon minced capers
  • ¼ teaspoon dijon-style mustard
  • ¼ cup vegetable oil

DIRECTIONS

  • Whisk together the vinegar, salt, pepper, shallots, capers and mustard – whisking the mixture until the salt dissolves.
  • Add the oil in a slow steady stream, whisking constantly. Don’t rush this – add the oil slowly.
  • The dressing will keep, refrigerated in a covered container for 1 week. Pour over mixed greens.

 

Fennel French Onion Soup

  yield: 2

¼ bulb fennel sliced

2 onions sliced

2 garlic cloves, minced

2 tablespoons butter

1 bay leaf

4 cups beef stock/broth

½ cup Swiss

2-4 pieces bread, toasted

 Salt and pepper to taste

In a pot over medium heat add butter, onions and fennel. Cook until caramelized. Add garlic, bay leaf, and stock/broth. Bring to a boil and allow to cook for 5 minutes. Turn heat off, season with salt and pepper then divide between bowls and top with bread and cheese. Place under broiler until cheese is melted or torch cheese to melt.

 

Steak Au Poivre

2 thick-cut Steaks Beef Tenderloin or NY Strip steak, 6-8 ounces, about 1 1/2 – inches thick

Coarse salt

1 Tablespoon whole black peppercorns crushed

1 Tablespoon butter

1 teaspoon olive oil

1/4 cup Cognac or brandy

½ cup heavy cream

Instructions:

  1. At least 30 minutes up to an hour before cooking remove the steaks from the fridge. Sprinkle all sides of steaks with salt.Just before cooking, pat steaks dry with paper towel to remove any excess moisture. Generously coat all sides of steaks with the fresh ground black pepper, pressing it into the steaks.
  2. Heat a large heavy cast iron skillet over medium high heat. Add butter and olive oil. Just as butter begins to smoke, place steaks in pan for medium rare, cook for 4 minutes on each side. Adjust cook time for desired doneness, using a meat thermometer for doneness. Transfer to plate, cover loosely with foil.
  3. Turn burners off. Carefully pour Cognac into hot frying pan. Carefully light the alcohol with a lighter and swirl the pan around until the flame burns out. Turn heat back on to medium. Whisking until sauce lightly thickens, about 6-8 minutes. Salt and pepper to taste, pour sauce over steaks.

Steak temperature:

Rare 125F, Medium Rare 135F, Medium 145F, Medium well 150F Well done 160F

 

Pomme Frites with Truffle Ailoi

Serves 4-6

Ingredients:

Vegetable oil, for frying2 large russet potatoes (about 1 ½  pounds) cleaned

Truffle Aioli

½ cup mayonnaise

½ crème fraiche or sour cream

 1 Tablespoon of white truffle oil

1 large clove, diced

Zest of 1 lemon

Salt and pepper

½ cup chopped fresh parsley

¼ cup finely chopped fresh rosemary

Mix all truffle Aioli ingredients together except herbs. Cover place in refrigerator.

1 Tablespoon white truffle oil, for drizzling

Directions:

  1. Heat 2 to 3 inches of oil in a heavy bottomed pot 350 degrees F.
  2. Carefully cut the potatoes into shoestring using a mandolin fitted with the narrowest julienne blade (about 1/8 inch wide). Rinse the cut potatoes thoroughly in a bowl of cold water to remove the surface starch. Keep to potatoes in bowl of cold water until ready to use.
  3. Transfer the potatoes to a paper towel lined sheet pan and pat them dry, as dry as possible.
  4. Fry the potatoes in batches until they are crisp and turn golden. 2-3 minutes per batch. As each batch of fries comes out, transfer to a large mixing bowl and toss with chopped herbs, drizzle with truffle oil and salt and pepper to taste serve with truffle aioli.

 

Chocolate pot de crème

  yield: 8

3 cup heavy cream

 2 cups semi sweet chocolate

4 egg yolks

3 tablespoon sugar

½ stick butter

¼ teaspoon salt

Whipped cream for serving

Pre heat oven to 300”F

Over a double boiler melt, heavy cream, chocolate, butter, sugar, and salt. Stir until fully melted and fully combined.  Temper the egg yolks slowly with the warm mixture. Once about 60% tempered then just combine all.

Pour evenly into ramekins and pour 1 inch of hot water into a sheet tray along with ramekins. Place in oven for 30-35 minutes.

Once finished chill for 3 hours before serving.

Honey Sriracha Roasted Carrots

ingredients

1 pound carrots, cleaned and slices 1/4+ inch thick

1/2 tablespoon honey

1/2 tablespoon sriracha (or other chili sauce)

salt and pepper to taste

1/2 tablespoon oil

 

Toss the carrots in the mixture of the honey, sriracha, salt & pepper and oil, arrange in a single layer on a baking sheet and bake in a preheated 400F/200C oven until tender, about 15-20 minutes, turning once in the middle. (Tip: Don’t pour any excess honey and sriracha onto the baking sheet as it will just burn; save it and toss the roasted carrots in it again before serving.)

 

Cheesy Horseradish Mashed Potatoes

  Yield: 2

2 Russet Potatoes

A handful of salt

1 Bay Leaves

½ cup Half & Half Cream or heavy cream

2 Sprigs of Fresh Thyme or 1 teaspoon dried

4 tablespoons Unsalted Butter

¼ cup Sour Cream

2 tsp Prepared Horseradish

1/2 cup Shredded White Aged Cheddar

¼ cup Swiss or Gruyere

Salt & Pepper, to taste

Place potato pieces and bay leaves into a large pot, and cover with enough water so that the water is 1 inch over the potatoes. Add enough salt to the water so that the water is similar to seawater. Place over medium-high heat and cook until potatoes are fork-tender. Remove bay leaf

Using a potato ricer or a masher, mash the potatoes back into the empty pot. Add butter, infused cream, sour cream, horseradish, and cheese to the pot, and mix well until completely combined. Season with salt and pepper, and serve

 

Classic Crème Brûlée

yield: 8 servings

4 cups heavy whipping cream

8 large egg yolks

½ cup sugar

2 tablespoons real vanilla extract or vanilla bean paste

½ teaspoon lemon zest

¼ teaspoon fine sea salt

Granulated sugar for Brûlée crust

Preheat oven to 325 degrees

  In a small mixing bowl, add egg yolks and beat well, whisking until yolks turn a pale yellow color.

  In a Medium saucepan, combine sugar and cream and heat on medium until mixture is approximately 170-180 degrees but do not boil. When steam begins to rise and small bubbles begin to form around the rim of the pan, turn off heat. Move bowl of yolks up against saucepan to limit spillage. Scoop 4 oz of hot liquid with a ladle and drizzle it into yolks while whisking it in. Add another ladle full being sure to whisk as it is poured to prevent eggs from cooking, gradually increasing speed. Repeat until ¾ of liquid has been added and bottom of bowl is hot. Return egg and cream mixture to saucepan and whisk to combine.

  Strain mixture through a fine-mesh sieve into a large measuring cup. Pour 4oz into each ramekin and set in roasting pan. Top off each ramekin with remaining custard. Fill roasting pan with 1 inch hot water around ramekins and place on oven rack in upper 1/3 of oven. Bake for 30-40 minutes, until custard is firm but jiggles when shaken. Remove from water bath and set on cooling rack for 15 minutes, then transfer to cooler to chill.

  Sprinkle top of each baked custard with granulated sugar and using a torch, broil sugar until medium brown and bubbling. Let stand 3 minutes for candy crust to harden and serve.

Lemon Blueberry Trifle

 Spinach Stuffed Bacon Wrapped Chicken

  Yield: 2

2 boneless skinless chicken breasts, pounded

½ cup cooked spinach

2 cloves garlic finely chopped

¼ cup onion finely chopped

¼ cup cream cheese

¼ cup shredded mozzarella

¼ cup grated Parmesan cheese

4 thin slices bacon

salt and pepper to taste

Preheat your oven to 425 degrees F.

In a mixing bowl, combine the cream cheese, spinach, garlic, onions, mozzarella and Parmesan. Mix until the cream cheese is evenly distributed.

Divide filling between chicken. Roll chicken up. Starting from the top of the breast, wrap one bacon strip around the 1st half of the chicken breast. Repeat with a second slice. You can stretch the bacon a bit to wrap the whole breast evenly. Repeat with the other chicken breasts.

Place the chicken breasts onto a sheet tray lined with parchment paper, and place in oven cook 35-40 minutes, until cooked through (175F internal temperature).

Alfredo Sauce

 

  • 1/4cup butter, cut into large cubes or slices
  • 1 cup heavy whipping cream
  • 1 clove garlic, minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian Seasoning
  • 1/4 teaspoon Kosher salt (not table salt)
  • 1/4 teaspoon pepper
  • 1 cups freshly grated Parmigiano-Reggiano cheese

 

 

  1. Add the butter and cream to a large nonstick sauté pan, over medium-low heat; whisk until butter has melted.
  2. Add in the minced garlic, garlic powder, Italian seasoning, salt, and pepper; whisk until combined and smooth.
  3. Bring to a gentle simmer (do not boil) and cook for 3-4 minutes, whisking constantly, until it starts to thicken.
  4. Stir in the parmesan cheese just until melted and the sauce is smooth.
  5. Take off the heat and toss with cooked fettuccine noodles (or your favorite pasta.)
  6. (If the sauce isn’t quite thick enough, allow it to stand for 2-3 minutes before tossing with the pasta.)

 

Roasted Vegetables with Garlic and Balsamic

 

 

yield: 2 servings

10-12 oz assorted vegetables ( broccoli, cauliflower, red onion, zucchini or sweet potato)

4 garlic cloves, quartered

2 tablespoons extra-virgin olive oil

1 tablespoon fine balsamic vinegar

¼ teaspoon fine sea salt

Pinch of ground black pepper or more if preferred

Preheat oven to 400 degrees

  In a medium mixing bowl, toss vegetables with garlic, oil, balsamic vinegar salt and pepper until coated. Transfer to a rimmed baking sheet and roast at 400 until vegetable start to brown. Remove from oven and serve immediately.

 

Blueberry Lemon Trifle

Yield 8:

1 ½ cups fresh blueberries, divided

1 can (15-3/4 ounces each) lemon pie filling

1 cup lemon yogurt

½ prepared angel food cake, cut into 1-inch cubes

3-4 cups whipped cream

Optional: Lemon slices and fresh mint

Set aside 1/4 cup blueberries for garnish. In a large bowl, combine pie filling and yogurt.

In 8 glasses, layer a third of the cake cubes, lemon mixture and blueberries. Repeat layers twice. Top with whipped topping. Garnish with reserved blueberries and, if desired, lemon and mint.

Roasted Blackberry Beef Tenderloin

Beef with blackberry sauce

Yield 2:

Beef tenderloin

Salt and pepper

Blackberry Sauce

1/2 cup red wine

1/4 cup roasted blackberries

¼ cup beef stock

2 tablespoons butter

Season Beef with salt and pepper. In a pan over medium high heat, add oil and beef. Cook until desired internal temp is reached.

Remove from pan and add red wine, roasted black berries, jam, beef stock and reduce down by half. Add butter and swirl to melt. Once melted turn heat off and serve on beef.

 

Scalloped Potatoes au Gratin

yield: 2 servings

2 teaspoons unsalted butter

2 teaspoons all-purpose flour

¼ teaspoon fine sea salt

Pinch ground black pepper pepper

½ cup whole milk

¼ cup shredded cheddar cheese

1 cup white potatoes, peeled and sliced ¼ inch thick

½ teaspoon shallot, minced

1 teaspoon Italian parsley, chopped

Preheat oven to 375 degrees

  In a small saucepan at low heat, melt butter and when butter subsides, add shallots. When shallots are soft and translucent, add flour and cook for 3-5 minutes stirring constantly. Add milk, cheese, salt and pepper and continue to cook until cheese is melted and sauce thickens. Taste and adjust with salt and pepper if needed.

  Arrange potatoes in a shallow baking dish so equally layered. Ladle sauce over top, careful not to overflow. Gently move potatoes to allow sauce to separate the slices and wipe inside rim of dish to avoid burning.

  Bake uncovered for  45-60 minutes, until potatoes are tender and sauce is bubbling brown but not too dark. Transfer half to a warmed dinner plate and garnish with chopped parsley

Italian Chopped Salad

yield: 2 servings

Salad:

4 oz romaine lettuce, cut in 1 inch bite-sized pieces

8 slices hard salami, cut in ¼ inch pieces

¼ cup English cucumber, diced in ¼ inch cubes

¼ cup grape tomatoes, diced in ¼ inch cubes

2 pepperoncini peppers

¼ cup Kalamata olives, pitted and coarsely chopped

¼ cup blue cheese, crumbled

Dressing:

1 tablespoon red wine vinegar

3 tablespoons extra-virgin olive oil

¼ teaspoon Dijon mustard

½ teaspoon mixed fresh herbs in equal amounts (thyme, rosemary, basil, oregano, parsley), minced

1/8 teaspoon granulated garlic

¼ teaspoon shallot, minced

Pinch crushed red pepper seeds (optional)

Sea salt and ground black pepper

  In a small mixing bowl, combine vinegar, herbs, red pepper, garlic and Dijon mustard. Whisk for 1 minute to extract flavor from shallots and work out any lumps of garlic. Drizzle olive oil into bowl at the slowest steady stream possible while whisking vigorously. If oil begins to pool, increase whisking speed and stop drizzling until pools are gone, then resume adding oil. When all oil has been added, dressing should be slightly thickened and not separated. Taste and adjust flavor with salt and pepper if needed.

  Add all chopped ingredients to a small mixing bowl and add half of dressing. Toss or fold contents to evenly coat with dressing, adding more if needed or desired. Evenly divide salad between two chilled salad plates and top with crumbled bleu cheese. Serve immediately.

 

Classic Crème Brûlée

yield: 8 servings

4 cups heavy whipping cream

8 large egg yolks

½ cup sugar

2 tablespoons real vanilla extract or vanilla bean paste

½ teaspoon lemon zest

¼ teaspoon fine sea salt

Granulated sugar for Brûlée crust

Preheat oven to 325 degrees

  In a small mixing bowl, add egg yolks and beat well, whisking until yolks turn a pale yellow color.

  In a Medium saucepan, combine sugar and cream and heat on medium until mixture is approximately 170-180 degrees but do not boil. When steam begins to rise and small bubbles begin to form around the rim of the pan, turn off heat. Move bowl of yolks up against saucepan to limit spillage. Scoop 4 oz of hot liquid with a ladle and drizzle it into yolks while whisking it in. Add another ladle full being sure to whisk as it is poured to prevent eggs from cooking, gradually increasing speed. Repeat until ¾ of liquid has been added and bottom of bowl is hot. Return egg and cream mixture to saucepan and whisk to combine.

  Strain mixture through a fine-mesh sieve into a large measuring cup. Pour 4oz into each ramekin and set in roasting pan. Top off each ramekin with remaining custard. Fill roasting pan with 1 inch hot water around ramekins and place on oven rack in upper 1/3 of oven. Bake for 30-40 minutes, until custard is firm but jiggles when shaken. Remove from water bath and set on cooling rack for 15 minutes, then transfer to cooler to chill.

  Sprinkle top of each baked custard with granulated sugar and using a torch, broil sugar until medium brown and bubbling. Let stand 3 minutes for candy crust to harden and serve.

INGREDIENTS

5 oz fresh spinach

1/2 cup blueberries

3 oz raspberries

4 oz strawberries, halved

3/4 cup cubed brie

INSTRUCTIONS

Prepare the recipe for homemade poppy seed dressing.

In a bowl add the spinach, blueberries, raspberries, strawberries, Feta cheese, and walnuts.

Poppy Seed Dressing

Servings: 4 servings

1½ Tbsp balsamic vinegar

3 Tbsp olive oil

¼ tsp Dijon mustard

1 garlic clove, minced

2 tsp mayonnaise

1 Tbsp honey

1 tsp poppy seeds

Salt and pepper

Whisk Balsamic vinegar, oil, Dijon mustard, mayo, honey, poppy seeds, salt, pepper, and minced garlic.

Fresh Pasta Dough

yield: 2 servings

1 ¼ cups all purpose flour

2 large eggs

1 tablespoon olive oil

½ teaspoon sea salt

  Making fresh pasta dough is fun and very easy. Traditionally, the dough is mixed directly on a board or counter but it is acceptable to begin the dough in a bowl to limit the cleanup. Laminate counter tops are fine for kneading dough but natural or engineered stone is best as it is non-porous and maintains constant temperature, especially important when working with yeast doughs.

  In a bowl or on a countertop, combine the salt and flour. Using your fingers, create a well in the center of the mound, being sure that the well’s walls are equally thick and high. In a separate container, combine eggs and olive oil. Scramble eggs with a fork to incorporate oil.

  Add 1/3 of egg/oil mixture to center of well. Using a swirling motion, pull flour from inner walls of well into eggs and mix until it forms a thick paste. If working on a countertop, be careful not to break through the walls of the well as egg will run out over the work surface. When center is no longer runny, add half of remaining egg mixture and stir to paste. Add remaining liquid and repeat. Continue to mix until fork is no longer effective and then turn dough out onto work surface.

  Knead dough by flattening, folding it in half and pressing hard with the palm of your hand. Rotate 90’ and repeat over and over until dough is a consistent color (no patches of flour or egg mixture) and begins to feel springy. Pasta dough should be visibly bumpy but soft and smooth to the touch. To test, press a finger into dough. The depression made by your finger should spring back almost entirely. Flatten dough into a disk 1 ½ inches thick, wrap with saran and place in cooler to rest for 20-30 minutes or until finger divot does not bounce back. Lemon cream sauce

  yield: 2

1 cup heavy cream

1 lemon zested and juiced

¼ cup white wine

½ cup grated parmesan

In a large skillet over medium heat combine all ingredients and cook until thickened.

Season with salt and pepper then serve over pasta

 

 

 

 Butternut Squash Pasta Carbonara with Rosemary Bacon

  Yield: 2

1 pasta recipe, prepped, rolled out and cooked

½ cup pasta water

½ cup butternut squash mashed

2 tablespoons fresh thyme leaves

Red pepper flakes to taste

Salt and pepper to taste

2 cloves garlic, minced

4 slices bacon chopped

2 tablespoon chopped fresh rosemary

1/2-1 teaspoon cayenne pepper

2 teaspoons honey

2 large egg yolks

1 cup grated parmesan cheese, plus more for serving

2 tablespoons butter

In a pan over medium high heat add bacon and begin to cook. Cook for 3 minutes then add rosemary. Allow to cook until bacon is to desired crispiness then turn heat off and remove bacon from pan. Add thyme, garlic, and cayenne pepper to pan. Stir in butternut squash, cheese, honey and egg yolks. Slowly add pasta water while stirring. Add cooked pasta and butter to pan and toss to coat. Season with salt and pepper, toss in bacon and serve.

 

 

 

Chocolate pot de crème

  yield: 8

3 cup heavy cream

2 cups semi sweet chocolate

4 egg yolks

3 tablespoon sugar

½ stick butter

¼ teaspoon salt

Whipped cream for serving

Pre heat oven to 300”F

Over a double boiler melt, heavy cream, chocolate, butter, sugar, and salt. Stir until fully melted and fully combined. Temper the egg yolks by slowly adding the hot mixture.  When about a 1/3 has been added you can now add it to the chocolate mixture.

Pour evenly into ramekins and pour 1 inch of hot water into a sheet tray along with ramekins. Place in oven for 30-35 minutes.

Once finished chill for 3 hours before serving.

Seared Salmon with Cinnamon and Chili Spices

Ingredients

1 salmon fillet with skin attached

1/2 teaspoon chile powder

1/4 teaspoon cinnamon

1/8 teaspoon coarse salt

1/8 teaspoon freshly ground black pepper

Canola oil, enough to barely slick the skillet

1 dash sesame oil

Directions

Wash and completely pat dry the salmon fillet.

In a small bowl mix Chile powder, cinnamon, and the salt and pepper. Sprinkle this mixture on both sides of the salmon fillet. Heat canola oil and sesame oil in a skillet. Choose a skillet that is plenty big enough to avoid steaming the fish for the crispest possible skin.

When the skillet is very hot, but not yet smoking, add the salmon, skin-side down. Cook it until the skin is very crisp, dark brown and releases easily from the skillet This should take 3 to 4 minutes. Do not be tempted to check or move the fish around in the skillet during this time. You will only succeed in making it stick to the skillet or worse ruin your beautifully crisp skin.

You will notice that the fish gets lighter colored and more opaque. Do not let it cook more than about 1/4 of the way through at this point. You might be worried that the rest of the fish seems raw, but honestly this is a good thing. Once the skin has crisped flip the fish, and cook it an additional 2 (maybe 3) minutes more. Do not let it cook all the way through. The fish will continue to cook after it leaves the pan. Your goal is a succulent flesh graduating from a rare center outwards to a crispy crackly skin.

Serve the fish warm or at room temperature with a slightly chilled Pinot Noir (yes, Pinot Noir… trust me).

 

Creamy Dill Sauce for Salmon

1/2 cup plain Greek yogurt, fat-free, low-fat or whole.

2 Tablespoons mayonnaise

1/2 tablespoon lemon juice (or white wine vinegar)

1 tablespoons chopped fresh dill

1/2 tablespoon finely minced shallot

1/2 tablespoon finely chopped capers, optional

1/2 teaspoon coarse or whole grain mustard

Salt and pepper to taste

Instructions

Whisk yogurt, mayonnaise, and lemon juice until smooth.

Whisk in dill, shallot, capers (if using), mustard, salt, and pepper. Chill or serve immediately.

Baked Sweet Potatoes with Maple Crème Fraîche

INGREDIENTS

FOR THE SWEET POTATOES:

  • 4 sweet potatoes (each 7 ounces), preferably a yellow-fleshed variety such as Garnet or Jewel
  • 2 tablespoons unsalted butter, as room temperature
  • Fine sea salt
  • 1/2 cup crème fraîche or sour cream
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon fresh lime juice
  • 2 teaspoons fish sauce (optional)
  • 1/2 teaspoon ground black pepper
  • Fine sea salt
  • 2 tablespoons thinly sliced scallions, both green and white parts
  • 2 tablespoons roasted peanuts
  • 1 teaspoon red chilli (chile) flakes, such as Aleppo, Maras, or Urfa
  • 1/2 teaspoon lime zest

INSTRUCTIONS

To prepare the sweet potatoes, preheat the oven to 400°F.

Rinse and scrub the sweet potatoes under running tap water. Slice them lengthwise and place them in a roasting pan, cut side facing up. Brush with the butter and season with salt. Cover the pan with a sheet of aluminum foil and press around the edges to seal snugly. Bake for 20 minutes. After 20 minutes, remove the foil, flip the sweet potatoes, and cook, uncovered, for 20 minutes more, until the sweet potatoes are cooked thoroughly and are tender; a knife inserted into the center of the sweet potato should slide through easily. Remove from the heat and let rest for 5 minutes.

To prepare the dressing, in a small bowl, combine the crème fraîche, maple syrup, lime juice, fish sauce, if using, and pepper. Taste and season with salt.

To serve, top the warm roasted potatoes with a few tablespoons of the maple crème fraîche dressing. Sprinkle with the scallions, peanuts, red chilli flakes, and lime zest. Serve with the extra dressing on the side.

 

CACIO E PEPE BRUSSELS SPROUTS

INGREDIENTS

  • 1 tablespoons extra-virgin olive oil
  • 3/4 teaspoons freshly ground pepper
  • Crushed red pepper flakes
  • 7 ounces shredded Brussels sprouts
  • 1/2 teaspoon kosher salt
  • 1/2cup freshly grated Parmesan cheese, plus more for serving
  • Zest of 1/2 lemon
  • 1/4 cup toasted hazelnuts or pecans, roughly chopped

INSTRUCTIONS

In a large skillet over medium heat, cook the olive oil, pepper, and red pepper flakes together until               toasted, 30 seconds to 1 minute.

Add the Brussels sprouts and cook, without stirring, until they begin to soften, about 2 minutes.

Season with the salt, and cook until the Brussels sprouts just begin to char, about 2 minutes.

Remove the skillet from the heat and add the Parmesan, lemon zest, and hazelnuts.

Serve warm, topped with more fresh Parmesan, if desired.

 

Easy Apple Galette

Ingredients

Crust

1 and 1/2 cups (188g) all-purpose flour (spooned & leveled), plus more for work surface

2 Tablespoons (25g) granulated sugar

1/4 teaspoon salt

1/2 cup (8 Tbsp; 113g) cold unsalted butter, cubed*

1/4 cup (60ml) ice-cold water, plus more as needed

egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk

optional: coarse sugar

Filling

3–4 apples, peeled and sliced into 1/4-inch slices (about 4–5 cups (500–600g) slices)*

1/4 cup (50g) packed light or dark brown sugar

1 and 1/2 Tablespoons (12g) all-purpose flour

2 teaspoons fresh lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

optional: salted caramel sauce

Make the crust: Whisk the flour, sugar, and salt together in a medium bowl. Using a pastry cutter or 2 forks, cut in the butter until the mixture resembles coarse pea-sized crumbs. Add the water and stir until the flour is moistened. Add 1–2 more Tablespoons of water if the dough seems dry. Turn the dough out onto a lightly floured work surface and, using your hands, work the dough into a ball. Flatten it into a thick disc. Wrap the dough disc in plastic wrap or parchment paper and refrigerate it for at least 1 hour, and up to 3 days.

As the dough chills, prepare the filling: Mix the apples, brown sugar, flour, lemon juice, cinnamon, and nutmeg together in a large bowl. Cover tightly and let sit until the dough is ready. I usually cover it and keep it in the refrigerator during this time.

Line a large baking sheet with parchment paper or a silicone baking mat. Clear some shelf space in your refrigerator because the shaped galette must chill in step 6. (See recipe Note below.)

On a lightly floured surface, roll the dough into a 12-inch circle—it doesn’t have to be perfect. Transfer dough to the prepared baking sheet. (You can also roll the dough out right on the parchment paper or silicone baking mat that you are using to line the baking pan. If doing so, lightly flour the parchment paper or baking mat.)

Arrange the apples (and any juices from the bottom of the bowl) into the center of the dough, leaving a 2–3-inch border all around them. You can simply spoon the filling on, or arrange the apple slices in a more deliberate design, such as concentric circles. Gently fold the edges of the dough over the filling, overlapping the dough as necessary. Press gently to seal the edges. Brush the crust edges generously with egg wash and sprinkle the crust with coarse sugar, if desired. If desired, drizzle 3 Tablespoons of salted caramel over the filling (not the crust).

Refrigerate the shaped galette for at least 15–20 minutes as the oven preheats (next step), and up to 8 hours. If refrigerating for longer than 1–2 hours, cover it lightly. The galette will lose its shape if it’s not cold when it hits the oven.

Preheat oven to 400°F (204°C).

Bake until the filling is bubbly and the crust is golden brown, about 35–36 minutes. Remove from the oven and allow to cool on the baking sheet for 10 minutes before slicing and serving. If desired, serve with vanilla ice cream and more salted caramel sauce drizzled on top.

Cover and store leftover galette in the refrigerator for up to 4 days.

1 cup seasoned flour

1 egg

In a small bowl combine egg and milk. Whisk to combine. Stir in seasoned flour making sure no lumps appear.

If mixture is to thick, adjust by adding 1 tablespoon of milk at a time.

Add chicken and fully coat.

In a large skillet bring oil up to medium high heat. Slowly add 3-4 chicken strips into oil at a time. Cook until golden brown. Once ready to remove, place onto plate lined with paper towel to drain any extra oil. Continue to cook chicken until all are done. Serve with choice of sauce.

 

Romaine and Berry Salad with Vinaigrette

yield: 2 servings

½ head Romaine lettuce, rinsed and cut in ½ inch slices

½ cup mixed berries

1 tablespoon champagne vinegar

3 tablespoons extra-virgin olive oil

¼ teaspoon fresh thyme, minced

3 tablespoons walnuts roughly chopped and lightly toasted.

1 teaspoon Italian parsley, minced

1 teaspoon honey

Sea salt and ground black pepper

  In a small mixing bowl, combine champagne vinegar, honey and thyme. Whisk to incorporate and add parsley. Pouring in the slowest steady stream possible, drizzle olive oil into bowl while whisking vigorously. If oil begins to pool, stop pouring and whisk until incorporated and oil is used. As emulsion forms, dressing will thicken and will not separate. Taste and adjust flavor with salt and pepper.

  Dry Romaine thoroughly. Using tongs, place a mound of lettuce on a chilled salad plate. Arrange sliced strawberries on top of lettuce and sprinkle with walnuts. Drizzle dressing over salad and serve immediately.

 

Chocolate Chip Skillet Cookie for Two

Ingredients

1/2 cup (75g | 2.6oz) unbleached all-purpose flour

1/4 tsp baking soda

1/4 tsp salt

1/4 cup (50g | 1.8oz) granulated sugar

1/4 cup (50g | 1.8oz) light brown sugar, packed

1 tsp pure vanilla extract, (store-bought or homemade)

1/4 cup (60g | 2.1oz) butter, melted

1 large egg yolk

1/2 cup (90g | 3.2oz) semi-sweet chocolate chips, divided (save a few tablespoons to melt and drizzle over cooked cookie)

Your favorite vanilla ice cream, for serving

Instructions

 

Preheat your oven to 350°F and generously butter a 6-1/4” mini cast iron skillet. If you didn’t have such a skillet, you could use a 6” cake pan instead, but you may have to adjust baking time slightly.

Combine the flour, baking soda and salt in a bowl and mix well with a whisk until well combined; set aside.

In a separate mixing bowl, combine the granulated sugar, brown sugar and vanilla extract. Add the melted butter and stir with a fork until well combined.

Add the egg yolk, stir well, and then carefully stir in the flour mixture. Mix until completely combined, then stir about 2/3 of the chocolate chips.

Transfer the cookie dough to the cast iron skillet and arrange it delicately with your fork, just so it’s evenly distributed across the skillet.

Bake for about 18-20 minutes, or until the edges are puffed and browned and the center appears set.

Remove from the oven and press a few additional chocolate chips across the surface of the cookie, if desired; allow to cool for about 5 minutes.

Meanwhile, melt the remaining chocolate chips in the microwave, adding a few drops of oil to make it more drizzleable, if necessary.

Garnish the cookie with a great big scoop of vanilla ice cream, drizzle with the melted chocolate and serve with 2 spoons!

 Creamy Wild Rice Chicken Chorizo Soup With Roasted Mushrooms

  Yield: 2

1 boneless, skinless chicken breast

2 tablespoons butter

1/2 cup dry wild rice blend

1 carrot, chopped

1 stalks celery, chopped

1 medium shallot, or ¼ red onion chopped

2 cups low-sodium chicken broth

1 tablespoons chopped fresh thyme or 1 teaspoon dried

½ tablespoon chopped fresh sage or ½ teaspoon dried

Crushed red pepper flakes to taste

1 cups fresh baby spinach or kale

1 tablespoon chopped fresh parsley

½ cup heavy cream or whole milk

½ cup grated parmesan, plus more for serving

Salt and pepper to taste

2 tablespoons butter, melted

1 cup mushrooms halved

1 sprigs fresh rosemary

4 cloves garlic, minced

Zest from 1 lemon

To make the mushrooms. Preheat the oven to 425 degrees F. On a baking sheet, combine the last 2 tablespoons of butter, mushrooms, garlic, rosemary, lemon zest, and a pinch each of salt and pepper. Transfer to the oven and roast for 25-30 minutes, until the mushrooms are golden and crisp. In a large pot, melt 2 tablespoons butter. Add the carrots, celery, shallots, and a pinch each of salt and pepper. Cook until fragrant and caramelized. Stir in the broth, chicken, wild rice, thyme, sage, crushed red pepper, and season with salt and pepper. Bring to a bowl over high heat. Once boiling, cover and reduce the heat to low, cook 35-45 minutes, until the rice is tender. Shred the chicken with 2 forks. Stir in the cream, parmesan, and spinach. Cook over medium heat until warmed through. Stir in the parsley and the mushrooms, garlic, and any butter left into the soup. Divide the soup among bowls and top with rosemary and additional parmesan.

 

 

 

 Honey Chipotle Chicken Sweet Potato Skins

  Yield: 2

2 sweet potatoes prebaked cut in halve

1 chicken breast prebaked and shredded

1 tablespoon chipotle pure

2 tablespoon mayonnaise

1 tablespoon honey

½ cup Swiss

2 green onions chopped

2 tablespoons fresh basil chopped

Salt and pepper to taste

Preheat oven 375”F

Scoop out sweet potato into a bowl leaving skins intact. Add shredded chicken, chipotle, mayonnaise, honey, Swiss, green onions, basil, salt and pepper into bowl with sweet potato. Stir to combine. Spoon back into sweet potato skins and place on a sheet tray lined with parchment paper. Place in oven and cook for 25 minutes or until heated through. Serve.

 

 

 

 Apple Cider Red Wine Rosemary Beef Tenderloin

  Yield: 2

Beef tenderloin

Salt and pepper to taste

Oil

¼ red onion, minced

2 garlic cloves, minced

½ cup red wine

¼ cup apple cider

1 tablespoon apple cider vinegar

1 spring fresh rosemary or 1 teaspoon dried

2 tablespoon butter

¼ cup apple butter

In a skillet over medium heat add oil, season beef with salt and pepper. Place beef into pan cook to desired internal temperature. Remove from pan and set aside. Add onions and garlic to pan cook until fragrant. Add red wine, apple cider, apple cider vinegar, and rosemary. Cook until sauce reduced. Add butter and apple butter stir to fully combine. Season with salt and pepper. place steak back into pan and serve.

 

 

 

Cream Cheese Swirled Pumpkin Bread with Salted Maple Butter

  Yield 2

 

3 medium overly ripe bananas, mashed (about 1 cup mashed, see notes)

1 cup canned pumpkin puree

3/4 cup melted coconut oil (see notes)

2/3 cup maple syrup

3 large eggs, at room temperature

1 tablespoon vanilla extract

3 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1/2 teaspoon kosher salt

8 ounces cream cheese, at room temperature

1/4 cup cinnamon sugar

SALTED MAPLE BUTTER

4 tablespoons salted butter at room temperature

2 tablespoons maple syrup

Preheat the oven to 350 degrees F. Grease 2 (9×5 inch) bread pans. In a large mixing bowl, stir together the mashed bananas, pumpkin, coconut oil, maple syrup, eggs, and vanilla until combined. Add the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt, mix until just combined. Divide the batter evenly between the prepared bread pans. Place the cream cheese in a gallon size zip-top bag. Snip a small opening off of the corner of the bag. Squeeze out teaspoon size amounts directly into the pumpkin batter, using 4 ounces of cream cheese per bread pan. Gently swirl the cream cheese. Sprinkle the cinnamon sugar over top the batter. Transfer to the oven and bake for 40-45 minutes, or until center is just set.  Meanwhile, make the maple butter. In a small bowl, combine the butter and maple syrup. Remove the bread and let cool for at least 30 minutes before cutting…or just eat it warm with a smear of maple butter (you should do this!). Enjoy!

 

 

Zucchini Bread

Ingredients

1 and 3/4 cups (220g) all-purpose flour (spooned & leveled)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 and 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup (120ml) vegetable oil (or melted coconut oil)

1/2 cup (100g) packed light or dark brown sugar

1/2 cup (100g) granulated sugar

2 large eggs, at room temperature

1/4 cup (60g) unsweetened applesauce (or sour cream or Greek yogurt)

2 teaspoons pure vanilla extract

1 and 1/2 cups (180g) shredded zucchini (no need to blot)

optional: 1 cup (180g) semi-sweet chocolate chips (or chopped nuts, raisins, etc)

Instructions

Preheat the oven to 350°F (177°C). Grease a 9×5-inch loaf pan. See notes for muffins.

Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a large bowl until thoroughly combined. Set aside. In a medium bowl, whisk the oil, brown sugar, granulated sugar, eggs, applesauce, and vanilla together until combined. Whisk in the zucchini. Pour the wet ingredients into the dry ingredients. Gently stir or whisk until *just* combined; do not overmix. Fold in any optional add-ins like chocolate chips or nuts. Batter is slightly thick.

Spread the batter evenly into prepared loaf pan. Bake for 55-70 minutes. (I like to loosely cover the bread with aluminum foil halfway through to prevent heavy browning on top.) Baking times vary so keep an eye on yours. The bread is done when a toothpick inserted in the center comes out *mostly* clean with zero raw batter. Remove the bread from the oven and set on a wire rack. Cool in pan for 1 hour before removing from pan. You can slice the bread at this point, but it will still be warm in the center and may not slice neatly. For neat slices, continue cooling bread directly on a wire rack and then slice once cooled.
